Ingredients
  

  • 1 pound 450g boneless chicken thighs (or pork/lamb), cut into strips
  • 2 tablespoons olive oil - for grilling
  • 1 tablespoon red wine vinegar - for marination
  • 1 tablespoon dried oregano - for flavor
  • 2 teaspoons garlic powder - for seasoning
  • Salt and pepper to taste - for seasoning
  • 4 pita breads - for wrapping
  • 1 cup shredded lettuce - for filling
  • 1 medium tomato - diced (for filling)
  • 1/2 cucumber - sliced (for filling)
  • 1 cup tzatziki sauce - for dressing

Instructions
 

  • In a mixing bowl, combine the chicken (or chosen meat), olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper. Marinate for at least 15 minutes.
  • Heat a grill or skillet over medium-high heat. Cook the marinated meat for about 5-7 minutes on each side until cooked through and slightly charred.
  • Warm the pita breads on the grill for a minute on each side until soft.
  • To assemble the wraps, place some cooked meat on a warm pita, top with shredded lettuce, diced tomato, sliced cucumber, and a generous spoonful of tzatziki sauce.
  • Fold the pita in half and serve immediately, or wrap in parchment paper for easy eating.

Notes

For an extra kick, add some sliced jalapeños or hot sauce. You can substitute the meat with grilled vegetables for a vegetarian option. If you're short on time, use store-bought tzatziki.
Wraps can be customized with additional toppings like feta cheese, olives, or hot peppers. Play around with different meats or try lamb for a more traditional gyro experience.
