Equipment

  • Mixing bowl or jar with lid
  • Whisk or fork (if mixing in a bowl)
  • Measuring cups and spoons
  • Garlic press (optional, for mincing garlic)

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • Juice of 1 lemon - about 2 tablespoons
  • 2 garlic cloves - minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon honey - optional, for a hint of sweetness

Instructions

  • Combine Ingredients: In a bowl or a jar with a tight-fitting lid, combine the olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, dried basil, Dijon mustard, salt, and black pepper. If you prefer a slightly sweet undertone to balance the tanginess, add the honey.
  • Emulsify: Whisk the ingredients together in the bowl until fully combined and emulsified. If using a jar, tightly secure the lid and shake vigorously until the dressing is well mixed.
  • Taste and Adjust: Taste the dressing and adjust the seasoning if necessary. You might want to add more lemon juice for extra tanginess, a bit more honey for sweetness, or adjust the herbs to suit your preference.
  • Serve or Store: Use the dressing immediately, or store it in the refrigerator for later use. The flavors will continue to meld and develop over time. It's best to let the dressing sit at room temperature for a few minutes and give it a good shake or stir before using if it has been chilled.

Notes

This Greek Dressing is not only flavorful but also versatile, making it a must-have in your culinary toolkit. Enjoy it on a traditional Greek salad, as a marinade for chicken or lamb, or as a zesty addition to your favorite vegetable dishes.
