Ingredients
  

  • 8 oz goat cheese
  • 1 egg - beaten
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup all-purpose flour
  • Salt and pepper
  • Vegetable oil - for frying
  • 1/4 cup honey
  • 1 tsp balsamic vinegar
  • Fresh thyme - for garnish

Instructions
 

  • In a mixing bowl, add the goat cheese and lightly beat with a fork. Season with salt and pepper.
  • Using your hands, form the goat cheese into 8 small balls.
  • In separate bowls, place the beaten egg, flour and breadcrumbs.
  • Dip each goat cheese ball into the flour, then the egg, and finally the breadcrumbs, coating evenly.
  • Heat 1 inch of vegetable oil in a frying pan over medium heat. Once hot, carefully add in the coated goat cheese balls and fry until golden brown, about 2-3 minutes per side.
  • Remove from the oil and place on a paper towel-lined baking sheet to drain excess oil.
  • In a small saucepan, warm the honey and balsamic vinegar together over low heat until combined.
  • Drizzle the honey mixture over the croquettes and garnish with fresh thyme.
  • Serve warm and enjoy!

Notes

For a crispier coating, you can double coat the goat cheese balls in the egg and breadcrumbs.
You can also add some chopped nuts to the breadcrumb mixture for extra crunch.
If you don't have balsamic vinegar, you can substitute with apple cider vinegar or lemon juice.
