Instructions
Preheat your oven to 350°F (175°C) and prepare a madeleine pan by greasing it lightly.
In a mixing bowl, sift together the coconut flour, sugar, baking powder, and salt.
In another bowl, whisk the eggs until they are well combined, then add the melted butter and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fill the madeleine mold about 3/4 full with batter.
Bake for 8-10 minutes or until the edges are lightly golden and a toothpick inserted comes out clean.
Allow cooling for a few minutes before carefully removing from the pan.
