Equipment

  • 1 Madeleine Pan
  • 1 Mixing bowl
  • 1 Whisk
  • 1 Sifter

Ingredients

  • 1/2 cup coconut flour - for a delicate texture
  • 1/4 cup sugar - adjust based on sweetness preference
  • 1/2 teaspoon baking powder - to help with rising
  • 1/4 teaspoon salt - to enhance flavor
  • 4 large eggs - ensure they are at room temperature
  • 1/2 cup melted butter - for richness
  • 1 teaspoon vanilla extract - optional for flavor

Instructions

  • Preheat your oven to 350°F (175°C) and prepare a madeleine pan by greasing it lightly.
  • In a mixing bowl, sift together the coconut flour, sugar, baking powder, and salt.
  • In another bowl, whisk the eggs until they are well combined, then add the melted butter and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fill the madeleine mold about 3/4 full with batter.
  • Bake for 8-10 minutes or until the edges are lightly golden and a toothpick inserted comes out clean.
  • Allow cooling for a few minutes before carefully removing from the pan.

Notes

To enhance the flavor, consider adding a teaspoon of vanilla extract or lemon zest.
For a sweeter version, you can substitute half of the coconut flour with almond flour.
Ensure the eggs are at room temperature for better texture.
