Ingredients
  

  • 1 and 1/2 cups gluten-free all-purpose flour - for better texture, choose a blend with xanthan gum
  • 1/4 cup powdered sugar - adds sweetness and tenderness
  • 1/4 teaspoon salt - enhances flavor
  • 1/2 cup unsalted butter - chilled and diced (for a flaky crust)
  • 1/4 cup cold water - adjust as necessary
  • 2 cups mixed berries - strawberries, blueberries, raspberries – fresh or frozen
  • 1/4 cup granulated sugar - adjust based on berry sweetness
  • 1 tablespoon cornstarch - for thickening the berry filling
  • 1 teaspoon vanilla extract - adds flavor
  • 1 egg - beaten (for egg wash)

Instructions
 

  • In a mixing bowl, combine the gluten-free flour, powdered sugar, and salt.
  • Add the chilled butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  • Gradually add cold water, mixing until the dough comes together. Form into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In another bowl, toss the mixed berries with granulated sugar, cornstarch, and vanilla extract.
  • Roll out the dough on a floured surface into a rough circle. Transfer it to the prepared baking sheet.
  • Spoon the berry mixture into the center of the dough, leaving a 2-inch border. Fold the edges over the berries, pleating the dough as needed.
  • Brush the edges of the galette with the beaten egg.
  • Bake for 30-35 minutes or until the crust is golden and the berries are bubbly.
  • Allow to cool slightly before serving. Enjoy warm or at room temperature.

Notes

This galette is versatile; you can use any berries you have on hand. For a sweeter filling, add more sugar. To make the dough easier to handle, chill it before rolling.
Serve warm with a scoop of vanilla ice cream or whipped cream for a special treat.
