Ingredients
  

  • 1 pound pork tenderloin - cut into bite-sized pieces
  • 1 cup pineapple chunks - fresh or canned
  • 1 bell pepper - sliced
  • 1 onion - sliced
  • 1/4 cup gluten-free soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic - minced
  • 1 teaspoon ginger - minced

Instructions
 

  • In a mixing bowl, combine the gluten-free soy sauce, rice vinegar, sugar, garlic, and ginger to create the sauce.
  • Heat the vegetable oil in a skillet over medium-high heat. Add the pork and cook until browned and cooked through.
  • Add the sliced onion and bell pepper to the skillet and stir-fry for about 3-4 minutes until softened.
  • Stir in the pineapple chunks and the prepared sauce. Bring to a simmer.
  • In a small bowl, mix cornstarch with a tablespoon of water. Stir it into the skillet and cook until the sauce thickens.
  • Serve hot on a plate and enjoy your meal!

Notes

For a spicier version, add chili flakes to the sauce.
If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with water and add it to the sauce during the last few minutes of cooking.
Feel free to substitute the pork with chicken or tofu for a different flavor profile.
