In a large mixing bowl, combine the sliced fennel and oranges.
In a small mixing bowl, whisk together the olive oil, orange juice, lemon juice, Dijon mustard, salt, and pepper.
Pour the dressing over the fennel and oranges and toss to coat.
Gently mix in the chopped parsley.
Top with crumbled feta cheese, if desired.

If fennel is not available, thinly sliced red onions can be used as a substitute.To make this salad a complete meal, add a protein such as grilled chicken or shrimp.
