Ingredients
  

  • 1 fennel bulb - thinly sliced
  • 2 oranges - peeled and sliced
  • 1/4 cup olive oil
  • 2 tbsp orange juice
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese - optional

Instructions
 

  • In a large mixing bowl, combine the sliced fennel and oranges.
  • In a small mixing bowl, whisk together the olive oil, orange juice, lemon juice, Dijon mustard, salt, and pepper.
  • Pour the dressing over the fennel and oranges and toss to coat.
  • Gently mix in the chopped parsley.
  • Top with crumbled feta cheese, if desired.
  • Serve and enjoy!

Notes

If fennel is not available, thinly sliced red onions can be used as a substitute.
To make this salad a complete meal, add a protein such as grilled chicken or shrimp.
