Ingredients
  

  • 1 can - 400g fava beans, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons extra virgin olive oil - plus extra for garnish
  • Juice of 1 lemon
  • 2 cloves garlic - minced
  • 1 teaspoon ground cumin
  • 1 teaspoon za'atar spice blend - plus extra for garnish
  • Salt and pepper - to taste
  • Water - as needed for desired consistency
  • Fresh parsley - chopped (for garnish, optional)

Instructions
 

  • In a food processor or blender, combine the fava beans, tahini, olive oil, lemon juice, minced garlic, ground cumin, and za'atar spice blend.
  • Blend until smooth, scraping down the sides of the processor or blender as needed.
  • If the mixture is too thick, add water, 1 tablespoon at a time, until you reach your desired consistency.
  • Taste the hummus and adjust the seasoning with salt and pepper as needed.
  • Transfer the hummus to a serving bowl. Drizzle with extra virgin olive oil and sprinkle with additional za'atar spice blend for garnish.
  • If desired, garnish with chopped fresh parsley for a pop of color.
  • Serve the fava-za'atar hummus with pita bread, crackers, or fresh vegetables for dipping.

Notes

This hummus can be stored in an airtight container in the refrigerator for up to one week.
Adjust the amount of za'atar spice blend according to your preference for flavor intensity.
For a smoother texture, you can peel the skins off the fava beans before blending, although this step is optional.
