In a pot of boiling water, cook the edamame for about 5 minutes or until tender. Drain and let cool.
In a blender or food processor, combine the cooked edamame, tahini, lemon juice, garlic, olive oil, cumin, salt, and pepper. Blend until smooth and creamy.
In a small bowl, mix together the olive oil, garlic powder, oregano, and salt.
Cut the pitas into triangles and place them on a baking sheet. Brush the olive oil mixture on both sides of the pitas.
Bake the pita chips for 10 minutes or until crispy.
Serve the edamame hummus with the homemade pita chips and enjoy!
Notes
You could also add in some fresh herbs like parsley or cilantro for extra flavor.This hummus also makes a great spread for sandwiches or wraps.
