Equipment

  • 1 Mixing bowl
  • 1 Whisk
  • 1 Grater
  • 1 Measuring spoons
  • 1 Serving dish

Ingredients

  • 1 cup coconut yogurt - choose unsweetened for best results
  • 1 cucumber - grated (remove excess moisture for a smoother sauce)
  • 2 cloves garlic - minced (adjust to taste)
  • 1 tablespoon fresh lemon juice - adds brightness
  • 1 tablespoon olive oil - optional, for richness
  • 1 teaspoon dried dill - or 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

  • In a mixing bowl, combine the coconut yogurt, grated cucumber, minced garlic, lemon juice, and olive oil (if using).
  • Add the dried dill and mix until well combined.
  • Season with salt and pepper to taste, adjusting as necessary.
  • Transfer to a serving dish and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Serve chilled as a dip or sauce.

Notes

For a thicker consistency, use full-fat coconut yogurt.
Feel free to adjust the garlic to your preference - more for a stronger flavor, less for milder taste.
Serve with pita chips, fresh vegetables, or as a sauce for grilled meats.
