Ingredients
  

  • 4 medium onions - thinly sliced

  • 1 teaspoon dried thyme - for added flavor
  • 1 teaspoon salt - to taste

  • 4 slices crusty bread - for topping – use gluten-free bread if desired
  • 1 cup vegan cheese - grated, for topping

Instructions
 

  • In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook for about 45-50 minutes, stirring occasionally, until the onions are deeply caramelized and golden brown.
  • Stir in the balsamic vinegar, thyme, salt, and black pepper. Cook for an additional 2-3 minutes.
  • Pour in the vegetable broth, bring to a boil, then reduce the heat to low and let simmer for 10 minutes.
  • While the soup simmers, preheat your oven broiler. Place the slices of bread on a baking sheet and toast until golden brown.
  • Ladle the soup into oven-safe bowls, top each bowl with a slice of toasted bread, and sprinkle with vegan cheese.
  • Place the bowls under the broiler for 2-4 minutes, or until the cheese is melted and bubbly.

Notes
