This refreshing salad is the perfect side dish for any summer meal. The thinly sliced cucumbers make beautiful ribbons that are tossed with a tangy dressing and crunchy toppings.
1/4cupchopped fresh herbs - such as parsley, mint, or dill
1/4cupcrumbled feta cheese
1/4cupsliced almonds - toasted
Dressing:
2tablespoonsolive oil
1tablespoonlemon juice
1tablespoonapple cider vinegar
1teaspoonhoney
Salt and pepper to taste
Instructions
Begin by preparing the cucumbers. Use a vegetable peeler to slice the cucumber lengthwise into thin ribbons. If you have a mandoline slicer, you can also use that for more even slices. Place the ribbons in a large mixing bowl.
In a separate small bowl, whisk together the dressing ingredients until well combined.
Pour the dressing over the cucumber ribbons in the mixing bowl and toss to coat evenly.
Add the red onion, fresh herbs, crumbled feta, and toasted almonds to the bowl, and gently toss to combine.
Serve immediately or refrigerate until ready to serve.
