Ingredients
  

Salad:

  • 2 large cucumbers
  • 1/4 red onion - thinly sliced
  • 1/4 cup chopped fresh herbs - such as parsley, mint, or dill
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds - toasted

Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions
 

  • Begin by preparing the cucumbers. Use a vegetable peeler to slice the cucumber lengthwise into thin ribbons. If you have a mandoline slicer, you can also use that for more even slices. Place the ribbons in a large mixing bowl.
  • In a separate small bowl, whisk together the dressing ingredients until well combined.
  • Pour the dressing over the cucumber ribbons in the mixing bowl and toss to coat evenly.
  • Add the red onion, fresh herbs, crumbled feta, and toasted almonds to the bowl, and gently toss to combine.
  • Serve immediately or refrigerate until ready to serve.
  • This salad is best enjoyed on the same day it is made.
