Ingredients
  

  • 1 cup yogurt - plain, full-fat recommended
  • 1 cup cucumber - grated
  • 1/2 teaspoon salt - or to taste
  • 1/4 teaspoon black pepper - freshly ground
  • 1/4 teaspoon roasted cumin powder - optional
  • 2 tablespoons fresh mint - chopped, optional
  • 1 tablespoon lemon juice - optional for tanginess

Instructions
 

  • In a mixing bowl, combine the yogurt and grated cucumber.
  • Whisk well until the mixture is smooth and combined.
  • Add salt, black pepper, and roasted cumin powder (if using) to the yogurt mixture. Stir to incorporate.
  • If desired, add chopped mint and lemon juice for additional flavor. Mix well.
  • Taste and adjust seasoning if needed.
  • Chill in the refrigerator for at least 30 minutes before serving for the best flavor.

Notes

For a more flavorful raita, consider adding finely chopped mint or coriander. You can also add a pinch of roasted cumin powder for extra depth. Serve chilled for the best flavor.
This raita can be made ahead of time and stored in the refrigerator for up to 2 days.
