1cupabout 100g Gruyère cheese, grated

2tablespoonsbutter
2tablespoonsall-purpose flour
1cupmilk
Salt and pepper, to taste
Pinch of nutmeg (optional)
Instructions
Preheat the oven to 375°F (190°C).
Spread Dijon mustard on one side of two slices of bread (if using). Layer one slice of ham and one slice of cheese on top. Place the other slice of bread on top to form a sandwich. Repeat with the remaining ingredients.
In a skillet over medium heat, melt 1 tablespoon of butter. Add the assembled sandwiches and cook until golden brown on one side, about 3-4 minutes.
Flip the sandwiches and repeat on the other side, adding more butter if necessary.
Transfer the sandwiches to the baking sheet and pour the béchamel sauce generously over each sandwich, then top with another half of cheese.
Bake in the oven until the cheese is melted and bubbly, about 5 minutes.
While the sandwiches are baking, fry the eggs in a non-stick skillet, seasoning with salt and pepper.
Once the cheese has melted, remove the sandwiches from the oven and top each with a fried egg.
Serve immediately, and enjoy your delicious Croque Madame!
