Ingredients
  

  • 2 cans 15 oz sweet corn - drained
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper - adjust to taste
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions
 

  • In a large skillet, heat olive oil over medium heat.
  • Add the drained corn and sauté for about 5 minutes, stirring occasionally.
  • Stir in the heavy cream, chicken broth, Cajun seasoning, chili powder, garlic powder, and cayenne pepper.
  • Reduce the heat and let it simmer for 15 minutes, stirring occasionally, until the sauce thickens slightly.
  • Season with salt and pepper to taste before serving.

Notes

For a vegetarian option, swap out the chicken broth for vegetable broth.
Feel free to adjust the spice level by adding more or less cayenne pepper.
This sauce pairs wonderfully with grilled chicken, tacos, or as a dip with tortilla chips.
