Ingredients
  

  • 1 lb fresh spinach - washed and stems removed
  • 2 tablespoons butter
  • 2 cloves of garlic - minced
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese
  • 1/8 teaspoon nutmeg

Instructions
 

  • In a large skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute.
  • Gradually add spinach to the skillet and cook until it wilts, stirring occasionally.
  • Sprinkle the flour over the spinach and stir until well combined.
  • Slowly pour in the milk, stirring constantly until the mixture thickens.
  • Season with salt, pepper, and nutmeg. Stir in the Parmesan cheese.
  • Reduce heat to low and cook for an additional 5 minutes, stirring occasionally.
  • Serve warm as a side dish or topping for meats, pasta, or potatoes.

Notes

For a richer flavor, use half and half or heavy cream instead of milk.
Spice up the dish by adding red pepper flakes or cayenne pepper for some heat.
To make it vegetarian or vegan, substitute butter with olive oil and use non-dairy milk and cheese alternatives.
Creamed spinach can also be made with frozen spinach, just be sure to thaw and drain the excess water before cooking.
