Ingredients
  

  • 6 slices about 1/2 inch thick French baguette (preferably day-old, for extra crispiness)
  • 4 ripe - medium-sized tomatoes, diced
  • 1/2 cup fresh basil leaves - chopped (more for garnish if desired)
  • 2 cloves garlic - minced
  • 1/4 cup extra virgin olive oil - plus more for drizzling
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Arrange the slices of baguette on a baking sheet and drizzle with olive oil.
  • Toast the bread in the preheated oven for about 5 minutes, or until golden and crisp.
  • In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, salt, and pepper. Mix well.
  • Spoon the tomato mixture generously onto each toasted baguette slice.
  • Garnish with additional basil leaves and a drizzle of olive oil if desired. Serve immediately.

Notes

This bruschetta is best served fresh, but if you have leftovers, store the toppings separately from the bread to prevent sogginess.
For variations, feel free to add diced mozzarella or a drizzle of balsamic glaze for extra flavor.
If you want a garlic flavor, rub a cut garlic clove on the toasted bread before adding the toppings.
