  • 1 can - 14 oz crushed tomatoes (for base sauce)
  • 4 large eggs - for poaching
  • Salt - to taste (for seasoning)
  • Pepper - to taste (for seasoning)
  • Fresh parsley - chopped (for garnish)

Instructions
 

  • Heat the olive oil in a skillet over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 5 minutes.
  • Stir in the minced garlic, ground cumin, paprika, and chili powder, cooking for another minute until fragrant.
  • Add the crushed tomatoes to the skillet, season with salt and pepper, and let the mixture simmer for about 10 minutes, stirring occasionally.
  • Create small wells in the sauce and crack an egg into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the egg whites are set and yolks are still slightly runny.
  • Garnish with chopped parsley and serve hot with crusty bread or pita.

Notes

For added flavor, consider adding crumbled feta cheese before serving. You can also spice it up with the addition of harissa or hot sauce. If you prefer a vegetarian version, swap out any meat-based ingredients with vegetables like zucchini or mushrooms.
Feel free to customize the spices based on your preference. Fresh herbs like parsley or cilantro can be a great garnish.
