Ingredients
  

  • 1 small head of cabbage - shredded
  • 1 large carrot - peeled and grated
  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 tablespoons white sugar
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the shredded cabbage and grated carrot.
  • In a separate small mixing bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until well combined.
  • Pour the dressing over the cabbage and carrot mixture and toss until evenly coated.
  • Serve immediately or refrigerate for at least 30 minutes for the flavors to come together.

Notes

For a creamier coleslaw, add an extra ¼ cup of mayonnaise.
Add some chopped parsley or green onions for added freshness.
For a healthier option, use Greek yogurt instead of mayonnaise.
