  • 2 cups water
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions
 

  • In a medium saucepan, combine the rice, water, and olive oil. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.
  • Remove from heat and let sit, covered, for 5 minutes. Fluff the rice with a fork.
  • Stir in the chopped cilantro, lime juice, and salt. Mix well and serve hot.
