Rinse the strawberries and pat them dry with a paper towel.
In a small saucepan, melt the chocolate chips and vegetable oil over low heat, stirring constantly until smooth.
Remove the saucepan from heat and let the chocolate cool for a few minutes.
Holding each strawberry by the stem, dip it into the melted chocolate, coating it completely.
Use a small fork to gently tap off any excess chocolate.
Place the chocolate covered strawberries onto the prepared baking sheet.
Repeat steps 5-7 until all strawberries are coated in chocolate.
If desired, add toppings to the strawberries while the chocolate is still wet.
Let the chocolate set at room temperature for about 15 minutes, or place the baking sheet in the fridge for quicker setting.
