Ingredients
  

  • 1 cup mayonnaise - preferably organic
  • 1-2 chipotle peppers in adobo sauce - adjust to taste
  • 1 tablespoon adobo sauce - from chipotle can
  • 1 teaspoon lime juice - freshly squeezed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt - to taste

Instructions
 

  • In a mixing bowl, combine the mayonnaise, chipotle peppers, adobo sauce, lime juice, garlic powder, and salt.
  • Using a whisk or spoon, mix all the ingredients until well combined and smooth.
  • Taste and adjust seasoning if necessary.
  • Transfer the mayo into a container for storage and refrigerate until ready to use.

Notes

For a spicier kick, add an extra chipotle pepper or some cayenne pepper.
This mayo can be stored in an airtight container in the fridge for up to a week.
For a lighter version, use Greek yogurt instead of mayonnaise.
