Ingredients
  

  • 2 tbsp Sichuan peppercorns - toasted
  • 1 tbsp star anise - crushed
  • 1 tbsp fennel seeds - toasted
  • 1 tbsp cinnamon - ground
  • 1 tbsp cloves - ground
  • 1 tbsp chili flakes
  • 1 tsp ginger - ground
  • 1 tsp garlic - granulated
  • 1 tsp brown sugar - packed

Instructions
 

  • In a spice grinder, combine the toasted Sichuan peppercorns, star anise, and fennel seeds. Grind into a fine powder.
  • Transfer the ground spices to a bowl and add the remaining ingredients. Mix well to combine.
  • Use the spice rub to season meats before grilling or roasting.

Notes

Store the spice rub in an airtight container in a cool, dry place for up to 6 months.
For a spicier version, add more chili flakes or cayenne pepper.
