Ingredients
  

  • 3 pounds Yukon Gold potatoes - peeled and thinly sliced
  • 2 cups heavy cream - for creaminess and richness
  • 1 and 1/2 cups smoked Gouda cheese - shredded, plus more for topping
  • 1 cup sharp white cheddar cheese - shredded
  • 1/4 cup grated Parmesan cheese - for depth of flavor
  • 4 tablespoons unsalted butter - for greasing the dish
  • 3 cloves garlic - minced
  • 1 teaspoon salt - to taste
  • 1/2 teaspoon black pepper - to taste
  • 1/2 teaspoon smoked paprika - for enhanced flavor

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease the baking dish with butter.
  • In a medium saucepan, melt a tablespoon of butter over medium heat and sauté the minced garlic until fragrant.
  • Add heavy cream, salt, black pepper, and smoked paprika to the saucepan. Bring to a slight simmer.
  • Layer half of the sliced potatoes in the greased baking dish. Pour half of the cream mixture over the potatoes and sprinkle with half of the smoked Gouda and cheddar cheeses.
  • Repeat layers with the remaining potatoes, cream mixture, and cheeses.
  • Top with grated Parmesan and additional smoked Gouda cheese.
  • Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until golden and bubbly.
  • Allow to cool for a few minutes before serving. Enjoy!

Notes

For a creamier texture, you can add an extra 1/2 cup of heavy cream.
Experiment with different cheeses such as sharp cheddar or fontina to change the flavor profile.
To save time, slice the potatoes in advance and soak them in cold water to prevent browning.
