In a mixing bowl, combine hoisin sauce, soy sauce, honey, Chinese five-spice powder, minced garlic, rice vinegar, sesame oil, and red food coloring (if using).
Place the pork into a resealable plastic bag or a dish and pour the marinade over it, ensuring the meat is well coated. Refrigerate for at least 4 hours or overnight.
Preheat the oven to 375°F (190°C). Remove the pork from the marinade and place it on a baking tray lined with aluminum foil.
