Ingredients
  

  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • 1 sheet store-bought puff pastry, thawed
  • 4 ounces goat cheese, crumbled
  • 2 teaspoons fresh thyme leaves

Instructions
 

  • Preheat the oven to 400F (200C).
  • In a large skillet, heat olive oil over medium heat. Add the onions and cook, stirring occasionally, until caramelized, about 20-25 minutes.
  • Stir in balsamic vinegar, sugar, salt, and pepper. Cook for an additional 5 minutes.
  • Roll out the puff pastry on a floured surface to fit the tart pan. Prick the bottom of the pastry with a fork.
  • Spread the caramelized onions over the pastry. Crumble goat cheese on top and sprinkle with fresh thyme leaves.
  • Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
  • Slice and serve the tart warm or at room temperature.

Variations: Try adding other vegetables like roasted red peppers or cherry tomatoes for added flavor.
