Ingredients
  

  • 8 ounces rotini pasta - or your choice of pasta
  • 1 cup cherry tomatoes - halved, preferably vibrant varieties
  • 1 cup fresh mozzarella balls - bocconcini, halved if large
  • 1/4 cup fresh basil leaves - torn
  • 1/4 cup olive oil - extra-virgin recommended
  • 2 tablespoons balsamic vinegar - or more to taste
  • Salt - to taste
  • Freshly ground black pepper - to taste

Instructions
 

  • In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a mixing bowl, combine the cooked pasta, cherry tomatoes, mozzarella, and basil.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  • Pour the dressing over the pasta salad and toss gently to combine.
  • Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.

Notes

For a heartier salad, add grilled chicken or shrimp.
Feel free to substitute basil with arugula for a peppery kick.
Use whole wheat pasta for added fiber, or gluten-free pasta if preferred.
Chill the salad for a couple of hours before serving to let the flavors meld perfectly!
