  • 1 French baguette - cut into 1/2-inch slices
  • 2 tablespoons olive oil - for brushing on bread
  • 2 cups cherry tomatoes - halved
  • 1 cup mozzarella balls - or sliced mozzarella
  • 1/4 cup fresh basil - chopped
  • Salt - to taste
  • Pepper - to taste
  • Balsamic glaze - for drizzling

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • On a baking tray, arrange the baguette slices in a single layer and brush each piece lightly with olive oil.
  • Toast the bread in the oven for about 5-7 minutes or until golden brown.
  • In a mixing bowl, combine the halved cherry tomatoes, mozzarella balls, chopped basil, salt, and pepper.
  • Remove the toasted bread from the oven and let it cool slightly.
  • Top each slice of toasted bread with the tomato and mozzarella mixture.
  • Drizzle the assembled bruschetta with balsamic glaze just before serving.
  • Arrange on a serving platter and enjoy!

Notes

For a delightful variation, try adding a sprinkle of garlic or a dash of chili flakes for extra flavor.
Use fresh ingredients for the best results; the quality of your tomatoes and mozzarella will greatly impact the dish.
If you're short on time, store-bought balsamic glaze can be a quick substitute for homemade.
