Ingredients
  

  • 1 cup cherry tomatoes - halved
  • 2 tablespoons olive oil - extra virgin
  • 1/2 teaspoon salt - adjust to taste
  • 1/4 teaspoon black pepper - freshly ground
  • 4 slices ciabatta bread - or any crusty bread
  • 1 clove garlic - peeled and halved
  • 8 ounces burrata cheese - at room temperature
  • Fresh basil leaves - for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the halved cherry tomatoes with olive oil, salt, and black pepper. Toss until well coated.
  • Spread the seasoned tomatoes evenly on a baking sheet and roast in the preheated oven for about 20 minutes, or until softened and slightly caramelized.
  • While the tomatoes are roasting, toast the ciabatta bread slices until golden brown, either in a toaster or under a broiler. Rub one side of each slice with the cut side of garlic.
  • Once the tomatoes are done, remove them from the oven and let them cool slightly.
  • To assemble, place a generous portion of roasted tomatoes on each piece of toasted bread and top with pieces of burrata.
  • Garnish with fresh basil leaves and serve immediately.

Notes

Feel free to substitute the burrata cheese with fresh mozzarella if needed.
For added flavor, drizzle the bruschetta with balsamic reduction before serving.
Serve immediately for the best texture, as the bread can become soggy if it sits too long.
