Ingredients
  

  • 8 bone-in - skin-on chicken thighs
  • Salt and pepper - to taste
  • 2 tablespoons olive oil
  • 1 onion - chopped
  • 4 cloves garlic - minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon crushed red pepper flakes - optional
  • 1 can - 14 ounces diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/4 cup sun-dried tomatoes - chopped
  • 1/4 cup Kalamata olives - pitted and sliced
  • Fresh parsley - chopped, for garnish

Instructions
 

  • Season the chicken thighs generously with salt and pepper on both sides.
  • In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and cook until golden brown, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic, dried oregano, dried thyme, paprika, and crushed red pepper flakes (if using), and cook for an additional 1-2 minutes until fragrant.
  • Stir in the diced tomatoes, chicken broth, sun-dried tomatoes, and sliced olives. Bring the mixture to a simmer.
  • Return the chicken thighs to the skillet, nestling them into the sauce. Cover the skillet with a lid and reduce the heat to low. Let the chicken simmer in the sauce for 45-50 minutes, or until cooked through and tender.
  • Once the chicken is done, remove the skillet from the heat. Taste the sauce and adjust the seasoning with salt and pepper if needed.
  • Garnish the braised Mediterranean chicken with chopped fresh parsley before serving.
  • Serve the chicken hot with your favorite side dishes, such as rice, couscous, or crusty bread, and enjoy the delicious flavors of the Mediterranean!

Notes

Feel free to customize the dish by adding other Mediterranean ingredients such as artichoke hearts, roasted red peppers, or capers.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for longer storage. Reheat gently on the stovetop or in the oven before serving.
