Equipment

  • 1 Large skillet
  • 1 Shallow baking pan
  • 1 Another skillet for eggs
  • 1 Pot for cooking rice

Ingredients

  • 1 cup uncooked rice - cooked according to package directions
  • 5 tablespoons butter
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 2/3 cup chopped scallions
  • 3 tablespoons sesame seeds - for toasting
  • 5 eggs - beaten
  • 5 tablespoons soy sauce
  • Salt - to taste
  • Pepper - to taste

Instructions

  • Cook rice according to package directions and set aside.
  • In a large skillet, melt butter over medium heat.
  • Add chopped onions, carrots, and scallions. Saute until the carrots are translucent.
  • Set the cooked vegetable mixture aside.
  • Preheat the oven to 350 degrees Fahrenheit. Place sesame seeds in a shallow pan and bake until golden brown, about 10 to 15 minutes, shaking the pan occasionally for even color.
  • Lightly grease another skillet and heat it. Pour in the beaten eggs, cooking them like scrambled eggs until fully set.
  • Combine the cooked rice, sautéed vegetables, toasted sesame seeds, and scrambled eggs in a large bowl.
  • Add soy sauce and mix well. Season with salt and pepper to taste.
  • Serve hot and enjoy your homemade Benihana Fried Rice!

Notes

For added flavor, try using aged soy sauce.
You can substitute vegetables with bell peppers or peas for variety.
Ensure you cook the rice a day ahead and refrigerate for best texture.
