BBQ Jackfruit Sliders are a delicious plant-based alternative to traditional pulled pork sliders. These sliders are packed with smoky flavors and have a delightful, meaty texture thanks to young jackfruit. Perfect for picnics, game day, or a casual dinner party, they will satisfy both vegans and meat-eaters alike.
2cans - 20 oz each young green jackfruit in water (drained and rinsed)
1tablespoonolive oil - for cooking
1/2cuponion - diced
2clovesgarlic - minced
1cupBBQ sauce - your choice
1teaspoonsmoked paprika - for flavor
1/2teaspoonblack pepper - to taste
4slider buns - or mini brioche buns
1/2cupcoleslaw - optional, for serving
Instructions
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft.
Add the minced garlic and sauté for an additional minute until fragrant.
Add the drained jackfruit to the skillet and using a potato masher, shred the jackfruit into smaller pieces.
Stir in the BBQ sauce, smoked paprika, and black pepper. Reduce heat to low and let simmer for about 20 minutes, stirring occasionally.
After cooking, remove from heat and assemble the sliders by placing a generous portion of the jackfruit mixture on each slider bun.
Top with coleslaw if desired and serve warm!
