Ingredients
  

  • 2 cans - 20 oz each young green jackfruit in water (drained and rinsed)
  • 1 tablespoon olive oil - for cooking
  • 1/2 cup onion - diced
  • 2 cloves garlic - minced
  • 1 cup BBQ sauce - your choice
  • 1 teaspoon smoked paprika - for flavor
  • 1/2 teaspoon black pepper - to taste
  • 4 slider buns - or mini brioche buns
  • 1/2 cup coleslaw - optional, for serving

Instructions
 

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft.
  • Add the minced garlic and sauté for an additional minute until fragrant.
  • Add the drained jackfruit to the skillet and using a potato masher, shred the jackfruit into smaller pieces.
  • Stir in the BBQ sauce, smoked paprika, and black pepper. Reduce heat to low and let simmer for about 20 minutes, stirring occasionally.
  • After cooking, remove from heat and assemble the sliders by placing a generous portion of the jackfruit mixture on each slider bun.
  • Top with coleslaw if desired and serve warm!

Notes

For a spicier kick, add some cayenne pepper or hot sauce to the jackfruit mixture.
These sliders can be served with coleslaw for added crunch.
Consider using a gluten-free bun to cater to gluten-sensitive guests.
