Ingredients
  

  • 1 pound baby carrots
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • Salt
  • Black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper.
  • Add the baby carrots to the bowl and toss to coat evenly.
  • Spread the carrots in a single layer on a baking sheet.
  • Roast for 25 minutes, flipping halfway through, until the carrots are tender and slightly caramelized.
  • Serve and enjoy!

Notes

This recipe also works well with regular peeled and sliced carrots.
For a bolder flavor, try adding a pinch of red pepper flakes to the balsamic glaze.
