Instructions
Preheat the oven to 400°F (200°C).
In a mixing bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper.
Add the baby carrots to the bowl and toss to coat evenly.
Spread the carrots in a single layer on a baking sheet.
Roast for 25 minutes, flipping halfway through, until the carrots are tender and slightly caramelized.
Serve and enjoy!
Notes
This recipe also works well with regular peeled and sliced carrots.
For a bolder flavor, try adding a pinch of red pepper flakes to the balsamic glaze.
