Ingredients
  

  • 1 baguette – sliced into 12 pieces
  • 2 ripe avocados – diced
  • 1 cup – cherry tomatoes, halved
  • 1 clove – garlic, minced
  • 2 tablespoons – fresh basil, chopped
  • 2 tablespoons – olive oil
  • 1 tablespoon – balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Preheat the toaster oven or pan over medium heat.
  • Toast the sliced baguette for about 2-3 minutes on each side until golden and crisp.
  • In a mixing bowl, combine diced avocados, halved cherry tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Gently toss together.
  • Top each toasted baguette slice with the avocado and tomato mixture.
  • Serve immediately on a serving platter.

Notes

For a spicy kick, add diced jalapeños to the avocado mixture.
You can substitute fresh basil with cilantro for a different flavor profile.
Try using heirloom tomatoes for extra color and taste.
