1 Mixing bowl
1 Baking sheet
1 Oven
- 1 and 1/2 cups warm water - to activate yeast
- 1 and 1/8 teaspoons active yeast - 1 and 1/2 packets
- 2 tablespoons brown sugar
- 1 and 1/8 teaspoons salt
- 1 cup bread flour
- 3 cups regular flour
- 2 cups warm water - for soda bath
- 2 tablespoons baking soda - for soda bath
- To taste coarse salt - for topping
- 2 to 4 tablespoons butter - melted, for brushing
Sprinkle yeast over 1 and 1/2 cups warm water in a mixing bowl and stir to dissolve.
Add brown sugar and 1 and 1/8 teaspoons salt to the mixture and stir until dissolved.
Add bread flour and regular flour, then knead the dough until smooth and elastic.
Cover the bowl and let the dough rise for at least 1/2 hour.
Prepare a baking soda water bath by mixing 2 cups warm water with 2 tablespoons of baking soda, stirring often.
Once the dough has risen, pinch off bits and roll each into a long rope (about 1/2 inch thick), shaping into pretzel forms.
Dip each pretzel into the baking soda solution and place on a greased baking sheet. Allow to rise again.
Preheat the oven to 450 degrees Fahrenheit and bake pretzels for about 10 minutes or until golden.
Remove from oven, brush with melted butter, and enjoy!
For toppings, sprinkle with coarse salt after brushing with butter or coat in cinnamon sugar mixture.
For best results, ensure your water is warm but not hot to keep the yeast active.
If you prefer a chewier texture, you can increase the baking soda in the water bath to 3 tablespoons.
These pretzels are delicious when topped with coarse sea salt or cinnamon sugar!
