Ingredients
  

  • 2 cups cooked rice - preferably day-old
  • 1 cup mixed vegetables - carrots, peas, bell peppers
  • 2 tablespoons vegetable oil - for frying
  • 2 eggs - beaten
  • 3 tablespoons teriyaki sauce - adjust to taste
  • 2 green onions - chopped
  • 1 teaspoon sesame oil - for flavor
  • Salt and pepper - to taste

Instructions
 

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add mixed vegetables to the skillet and stir-fry for about 3-4 minutes, until they are tender.
  • Push the vegetables to one side of the skillet, pour the beaten eggs onto the other side, and scramble them until fully cooked.
  • Combine the eggs and vegetables, then add the cooked rice to the skillet, breaking up any clumps.
  • Pour teriyaki sauce over the rice and mix well to ensure everything is evenly coated.
  • Drizzle sesame oil, add chopped green onions, and stir-fry for an additional 2-3 minutes.
  • Season with salt and pepper to taste, then serve hot.

Notes

This fried rice is easily customizable; feel free to add proteins like chicken, shrimp, or tofu.
For an extra kick, incorporate sriracha or chili flakes.
Day-old rice works best for a perfect texture, as it helps to prevent mushiness.
