Ingredients
  

  • 2 cups cooked rice - preferably day-old
  • 1 can black beans - drained and rinsed
  • 1 cup corn - fresh, frozen, or canned
  • 1 tablespoon olive oil - or vegetable oil
  • 1 medium onion - diced
  • 2 cloves garlic - minced
  • 1 teaspoon chili powder - or to taste
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro - chopped (for garnish)
  • Lime wedges - for serving

Instructions
 

  • Heat the oil in a large skillet or wok over medium heat.
  • Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Stir in the garlic and sauté for an additional minute until fragrant.
  • Add the black beans, corn, chili powder, cumin, salt, and pepper. Cook for about 2-3 minutes until heated through.
  • Add the cooked rice to the skillet and stir to combine all ingredients. Cook for another 5-7 minutes, stirring occasionally until the rice is heated through.
  • Remove from heat and garnish with fresh cilantro before serving.
  • Serve with lime wedges for an added zest.

Notes

Feel free to customize this dish by adding your favorite proteins such as grilled chicken or shrimp.
If you like extra heat, add some diced jalapeños or a splash of hot sauce.
This dish can also be made with leftover rice for a quick meal!
