Tips and Notes

  • Beef: Use a cut suitable for stewing, such as chuck roast or brisket. Cut the beef into uniform pieces for even cooking and browning.
  • Browning: Sear the beef in the Instant Pot using the sauté function. This step enhances the flavor by creating a rich brown crust on the meat.
  • Vegetables: Common vegetables for this stew include carrots, potatoes, and onions. Feel free to add other vegetables like peas or green beans for extra nutrition.
  • Liquid: Use beef broth or stock for a rich flavor. You can also add a splash of red wine for depth. Adjust the amount of liquid based on your desired stew consistency.
  • Storage: Store any leftover stew in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave before serving.

Enjoy the hearty and flavorful Instant Pot Beef Stew as a comforting addition to your meal rotation!

  • 1 large onion - diced (for added flavor)
  • 3 cloves garlic - minced (for a rich aroma)
  • 4 medium carrots - sliced (for sweetness and color)
  • 3 medium potatoes - diced (for heartiness)

  • 1 bay leaf - for added depth of flavor

Instructions

  • Set the Instant Pot to ‘Sauté’ mode. Add olive oil and heat it.
  • Once hot, add the beef pieces in batches, browning them on all sides. Remove the beef and set aside.
  • In the same pot, add the onion and garlic. Sauté for about 2-3 minutes until softened.
  • Add the tomato paste and stir for another minute.
  • Return the beef to the pot along with carrots, potatoes, beef broth, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper.
  • Close the Instant Pot lid, set it to ‘Manual’ or ‘Pressure Cook’ mode for 35 minutes.
