Ingredients
  

  • 2 lbs boneless chicken pieces - skinned (cut into 2″ squares)
  • 1 egg - beaten
  • 1 1/2 t salt
  • white pepper - to taste
  • oil - for frying, heated to 375°F
  • 1/2 c plus 1 T cornstarch - for coating
  • 1/4 c flour
  • 1 T minced ginger root
  • 1 t minced garlic
  • dash crushed hot red chiles - to taste
  • 1/4 c chopped green onions
  • 1 T rice wine
  • 1/4 c water
  • 1/2 to 1 t sesame oil - to taste
  • 2 t minced zest from 1 large orange
  • 1/4 c juice from 1 large orange
  • 1/2 t sugar
  • 2 T chicken stock
  • 1 T light soy sauce

Instructions
 

  • Combine orange zest, juice, sugar, chicken stock, and soy sauce in a small bowl and set aside.
  • In a large bowl, stir chicken with the beaten egg, salt, white pepper, and 1 T of oil until well mixed.
  • Stir cornstarch and flour together, then add to the chicken pieces, stirring to coat.
  • Heat oil in a wok or deep fryer to 375°F. Add chicken in small batches and fry for 3 to 4 minutes, or until golden and crisp. Remove and drain on paper towels.
  • Clean the wok and heat it over high heat for 15 seconds. Add 1 T of oil.
  • Add minced ginger and garlic, stir-frying until fragrant.
  • Add the crushed hot red chiles and chopped green onions; stir-fry for a few seconds.
  • Pour in the orange sauce and bring to a boil.
  • Add the fried chicken, stirring to ensure it is well mixed with the sauce.
  • Stir water into the remaining 1 T of cornstarch until smooth, then add it to the chicken mixture. Heat until the sauce thickens.
  • Stir in sesame oil and serve immediately.

Notes

This orange chicken can be served over rice or noodles for a complete meal. You can adjust the amount of crushed red chiles to control the spice level. If you prefer a thicker sauce, allow it to simmer longer.
