Serve Grilled Zucchini warm, drizzled with olive oil and a sprinkle of fresh herbs like basil or parsley for an added touch. It pairs beautifully with grilled meats, such as Chicken Tandoori or Ribeye Steak, and can also enhance pasta dishes or salads.

For a complete meal, consider serving it alongside Mediterranean Quinoa Salad or Pasta Primavera.

Tips and Notes

  • Zucchini: Choose firm, fresh zucchinis for the best texture. Slice them into long strips or rounds, about 1/4-inch thick, for even grilling.
  • Marinade: Toss the zucchini slices in olive oil, salt, pepper, and your favorite spices or herbs before grilling. Garlic powder, Italian seasoning, or lemon zest work wonderfully.
  • Grilling: Preheat the grill to medium heat and place the zucchini directly on the grill grates. Grill for about 3-4 minutes on each side, until tender and marked with grill lines.
  • Serving Options: For an extra flavor boost, sprinkle grated Parmesan cheese or crumbled feta cheese on top just before serving.
  • Storage: Store any leftover grilled zucchini in an airtight container in the refrigerator for up to 3 days. It can be enjoyed cold in salads or reheated in the microwave.

Enjoy the delicious simplicity of Grilled Zucchini as a flavorful addition to your meals!

This recipe can also be made with other types of vegetables such as eggplant or bell peppers. Simply slice them into strips and follow the same grilling and sauce instructions.
This spicy peanut sauce can also be used as a marinade for chicken or tofu.
For a vegetarian or vegan option, use agave nectar or maple syrup instead of honey.
