Fresh Berry Pavlova is a delightful dessert that combines a crisp meringue shell with a soft, marshmallow-like interior, topped with whipped cream and a medley of fresh berries.

This Australian and New Zealand classic is named after the ballerina Anna Pavlova and is known for its delicate texture and vibrant presentation.

Perfect for special occasions or a sophisticated finish to a meal, this dessert is sure to impress.

How to Serve?

Serve Fresh Berry Pavlova on a large, flat serving plate or individual dessert plates for an elegant presentation.

Begin by placing the meringue base on the plate and topping it with a generous layer of freshly whipped cream. Arrange an assortment of fresh berries, such as strawberries, blueberries, raspberries, and blackberries, on top. Garnish with mint leaves and a dusting of powdered sugar for a beautiful finish.

This dessert is best enjoyed immediately after assembly to maintain the crisp texture of the meringue.

How to Pair?

Fresh Berry Pavlova pairs beautifully with a variety of beverages.

Serve it with a chilled glass of sparkling wine or Champagne to complement the light, airy texture of the dessert.

For a non-alcoholic option, try a sparkling water with a splash of lemon or a refreshing iced herbal tea. This dessert also pairs well with a cup of freshly brewed coffee or a light, fruity tea.

The combination of the sweet meringue, creamy whipped topping, and tart berries makes it a versatile and delightful end to any meal.

Some Notes About the Recipe

  • Meringue: To make the meringue, beat egg whites until stiff peaks form, then gradually add sugar while continuing to beat until glossy. Incorporate a bit of cornstarch and vinegar to help stabilize the meringue.
  • Baking: Preheat the oven to 250°F (120°C). Shape the meringue into a circle on a parchment-lined baking sheet, creating a slight well in the center for the toppings. Bake for 1 to 1.5 hours until the exterior is crisp but the inside remains soft. Let it cool completely in the oven with the door slightly ajar.
  • Whipped Cream: Use cold heavy cream and beat until soft peaks form. Sweeten with a bit of powdered sugar and vanilla extract for extra flavor.
  • Berries: Use a mix of fresh, seasonal berries for the best flavor and presentation. Ensure the berries are washed and dried thoroughly before adding them to the pavlova.
  • Assembly: Assemble the pavlova just before serving to maintain the texture of the meringue. Spread the whipped cream gently over the meringue base, then arrange the berries on top.
  • Extras: For added flavor, drizzle the pavlova with a berry coulis or melted white chocolate. Edible flowers can also add a beautiful and sophisticated touch.
