Ingredients
  

  • 1 can - 400g fava beans, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons extra virgin olive oil - plus extra for garnish
  • Juice of 1 lemon
  • 2 cloves garlic - minced
  • 1 teaspoon ground cumin
  • 1 teaspoon za’atar spice blend - plus extra for garnish
  • Salt and pepper - to taste
  • Water - as needed for desired consistency
  • Fresh parsley - chopped (for garnish, optional)

Instructions
 

  • In a food processor or blender, combine the fava beans, tahini, olive oil, lemon juice, minced garlic, ground cumin, and za’atar spice blend.
  • Blend until smooth, scraping down the sides of the processor or blender as needed.
  • If the mixture is too thick, add water, 1 tablespoon at a time, until you reach your desired consistency.
  • Taste the hummus and adjust the seasoning with salt and pepper as needed.
  • Transfer the hummus to a serving bowl. Drizzle with extra virgin olive oil and sprinkle with additional za’atar spice blend for garnish.
  • If desired, garnish with chopped fresh parsley for a pop of color.
  • Serve the fava-za’atar hummus with pita bread, crackers, or fresh vegetables for dipping.
