Edamame Hummus with Pita Chips

Ingredients
Hummus:
- 1 cup shelled edamame
- 1/4 cup tahini
- 1/4 cup lemon juice
- 2 cloves garlic
- 2 tablespoons olive oil
- 1/4 teaspoon cumin
- Salt and pepper to taste
Pita Chips:
- 4 whole wheat pitas
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 375°F (190°C).
- In a pot of boiling water, cook the edamame for about 5 minutes or until tender. Drain and let cool.
- In a blender or food processor, combine the cooked edamame, tahini, lemon juice, garlic, olive oil, cumin, salt, and pepper. Blend until smooth and creamy.
- In a small bowl, mix together the olive oil, garlic powder, oregano, and salt.
- Cut the pitas into triangles and place them on a baking sheet. Brush the olive oil mixture on both sides of the pitas.
