This copycat Red Robin cheeseburger recreates the restaurant classic with seasoned ground beef, melted cheddar cheese, shredded lettuce, sliced tomatoes, and red onions on toasted brioche buns. The entire meal comes together on a skillet or griddle in 25 minutes.
Patty Shaping and Assembly
Pressing a center thumb indentation into each 3/4-inch patty keeps the beef from puffing up while cooking. Covering the skillet during the final minute melts the sliced cheddar directly over the meat before assembling the burgers with the mayonnaise, ketchup, and mustard sauce.
Serve these burgers alongside Butter Lemon Pepper French Fries or Tony Roma Onion Rings Copycat.

Equipment
- 1 Large skillet or griddle
- 1 Spatula
- 4 Burger Buns
Ingredients
- 1.5 pound ground beef 80/20
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 brioche buns
- 4 slices cheddar cheese
- 1/4 cup mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon mustard
- 1/4 cup shredded lettuce
- 2 medium tomatoes - sliced
- 1/2 red onion - thinly sliced
Instructions
- In a large bowl, gently mix the ground beef with garlic powder, onion powder, salt, and pepper. Do not overmix.
- Divide the beef mixture into 4 equal portions and form them into patties, about 3/4 inch thick. Make a slight indentation in the center of each patty with your thumb to prevent them from puffing up during cooking.
- Heat a large skillet or griddle over medium-high heat. If not using a non-stick skillet, add a tablespoon of oil.
- Place the patties on the hot skillet. Cook for about 3-4 minutes per side for medium-rare, or longer depending on your desired doneness. Avoid pressing down on the patties with the spatula.
- During the last minute of cooking, top each patty with a slice of cheddar cheese and cover the skillet to melt the cheese.
- While the burgers are cooking, mix the mayonnaise, ketchup, and mustard in a small bowl to create the special sauce.
- Lightly toast the brioche buns on the skillet or in a toaster.
- Spread the special sauce on the inside of both the top and bottom halves of the toasted buns.
- Assemble the burgers: place a cooked patty with melted cheese on the bottom bun. Top with shredded lettuce, tomato slices, and red onion slices.
- Place the top bun on the assembled burger and serve immediately.
Notes
To get that signature Red Robin flavor, don’t overcrowd the pan when cooking your burgers. Ensure good browning for a better crust. For an authentic taste, use the recommended bun and toppings. If you don’t have a grill press, a sturdy spatula can also be used to flatten the burgers slightly during cooking.
Tips and Tricks:
- Use good quality ground beef with at least 80/20 fat ratio for juiciness.
- Don’t overwork the ground beef when forming patties; this can make them tough.
- Toast the brioche buns for extra flavor and texture.
- Adjust the amount of seasoning to your personal preference.
- Add a slice of your favorite cheese, like cheddar, Swiss, or pepper jack.
- Top with bacon, sautéed mushrooms, or caramelized onions for a gourmet touch.
- For a spicier kick, add a dash of hot sauce to the mayonnaise or sprinkle some chili flakes on the patty before cooking.
