Ingredients
  

  • 2 ripe peaches
  • 1/4 cup bourbon
  • 3-4 fresh mint leaves
  • 1 tbsp simple syrup
  • 1/2 lime
  • Club soda or sparkling water
  • Ice cubes
  • Optional: lime slice and fresh mint sprig for garnish

Instructions
 

  • Cut one peach into small cubes and set aside. Slice the other peach into thin wedges for garnish.
  • In a cocktail shaker, muddle the peach cubes and mint leaves together until well mashed.
