Pairing Ideas

For a more substantial meal, consider serving them alongside a fresh salad or a hearty soup. The aioli also works as a flavorful dip for fresh vegetables or a spread for sandwiches.

Tips and Notes

  • Artichokes: Choose fresh, firm artichokes with tightly packed leaves for the best texture and flavor. Trim the stems and tips of the leaves to make them easier to eat.
  • Steaming: Steam the artichokes until the leaves pull off easily and the base is tender. This usually takes about 30-40 minutes, depending on the size of the artichokes.
  • Aioli: Make aioli by blending mayonnaise with minced garlic, lemon juice, and a touch of olive oil. Adjust the garlic and lemon to taste for a balanced flavor.
  • Storage: Store leftover aioli in an airtight container in the refrigerator for up to 1 week. Steamed artichokes can be stored in the refrigerator for up to 2 days—reheat gently or enjoy them cold.

Enjoy the tender artichokes and creamy aioli as a delightful addition to your meals!

Equipment

  • Steamer basket or pot with steaming rack
  • Saucepan
  • Mixing bowl

Ingredients

For the Steamed Artichokes:

  • 4 large artichokes
  • Water for steaming
  • Lemon wedges - for serving

For the Aioli:

  • 1/2 cup mayonnaise
  • 2 cloves garlic - minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper - to taste

Instructions

  • Prepare the artichokes by trimming off the top quarter of each artichoke and cutting off the stem so they can stand upright. Remove any small outer leaves and trim the tips of the remaining leaves.
  • Fill a large saucepan with water and place a steamer basket or steaming rack inside. Bring the water to a boil over medium-high heat.
  • Once the water is boiling, carefully place the prepared artichokes in the steamer basket or on the rack. Cover the saucepan with a lid and steam the artichokes for 20-25 minutes, or until the leaves are tender and can be easily pulled off.
  • While the artichokes are steaming, prepare the aioli. In a mixing bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper. Mix until well combined. Adjust seasoning to taste.
  • Once the artichokes are tender, remove them from the steamer basket and transfer them to a serving platter.
  • Serve the steamed artichokes warm or at room temperature, accompanied by the prepared aioli and lemon wedges for squeezing over the artichoke leaves.

Notes

To eat the artichokes, pull off the leaves one by one and dip the base of each leaf into the aioli. Scrape off the tender flesh with your teeth. Once you reach the inner choke and heart, remove the fuzzy choke with a spoon and enjoy the tender heart with the aioli.
Leftover aioli can be stored in an airtight container in the refrigerator for up to one week.
