Ingredients
  

For the Steamed Artichokes:

  • 4 large artichokes
  • Water for steaming
  • Lemon wedges - for serving

For the Aioli:

  • 1/2 cup mayonnaise
  • 2 cloves garlic - minced

Instructions
 

  • Prepare the artichokes by trimming off the top quarter of each artichoke and cutting off the stem so they can stand upright. Remove any small outer leaves and trim the tips of the remaining leaves.
  • Fill a large saucepan with water and place a steamer basket or steaming rack inside. Bring the water to a boil over medium-high heat.
  • Once the water is boiling, carefully place the prepared artichokes in the steamer basket or on the rack. Cover the saucepan with a lid and steam the artichokes for 20-25 minutes, or until the leaves are tender and can be easily pulled off.
  • While the artichokes are steaming, prepare the aioli. In a mixing bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper. Mix until well combined. Adjust seasoning to taste.
