Ingredients
  

  • 2 ripe peaches - peeled and pitted
  • 1 cup chilled Prosecco or champagne
  • 2 tablespoons peach schnapps
  • 1 tablespoon simple syrup or honey - optional
  • 1 cup ice
  • Peach slices and mint leaves for garnish - optional

Instructions
 

  • In a blender or food processor, puree the peeled and pitted peaches until smooth.
  • Pour the puree into the ice cube tray and freeze for at least 2 hours.
  • In a blender or food processor, blend the frozen peach cubes, Prosecco or champagne, peach schnapps, simple syrup or honey (if using), and ice until smooth.
  • Pour the mixture into champagne flutes or glasses.
  • Garnish with peach slices and mint leaves, if desired.
  • Serve and enjoy your Peach Bellini!

Notes

For a non-alcoholic option, replace the Prosecco or champagne with sparkling apple cider.
You can also use frozen peach slices instead of making your own peach puree.
For a stronger peach flavor, add more peach schnapps or use peach juice instead of simple syrup or honey.
