Ingredients
- 1 lb ground beef
- 1/2 cup almond flour
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped mushrooms
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic - minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup sugar-free ketchup
- 1 tbsp dijon mustard
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the ground beef, almond flour, parmesan cheese, onion, green bell pepper, mushrooms, parsley, egg, garlic, salt, and pepper. Mix well with your hands until all ingredients are evenly incorporated.
- Transfer the meat mixture into a greased loaf pan and shape it into a loaf shape.
- In a small bowl, mix together the sugar-free ketchup and dijon mustard. Spread the mixture evenly over the top of the meatloaf.
- Bake the meatloaf in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 5-10 minutes before slicing and serving.
