Equipment

  • 1 Large skillet
  • 1 food processor or grater
  • 1 Large mixing bowl

Ingredients
  

  • 1 head of cauliflower cut into florets
  • 1 tablespoon vegetable oil
  • 1 small yellow onion diced
  • 2 cloves of garlic minced
  • 1 red bell pepper diced
  • 1 cup frozen peas and carrots
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 green onions chopped
  • 2 eggs beaten
  • Salt and pepper to taste

Instructions
 

  • In a food processor or using a grater, pulse the cauliflower until it reaches a rice-like consistency.
  • In a large skillet, heat the vegetable oil over medium heat. Add in the diced onion and cook until translucent.
  • Add in the garlic, red bell pepper, and frozen peas and carrots. Cook for 2-3 minutes, until the vegetables are slightly softened.
  • Add in the cauliflower rice and cook for 5-7 minutes, stirring occasionally.
  • In a small bowl, mix together the soy sauce and sesame oil. Pour into the skillet and stir until the cauliflower is coated.
  • Push the cauliflower rice to one side of the skillet, and add in the beaten eggs on the other side. Scramble the eggs until cooked, then mix them into the cauliflower rice.
  • Season with salt and pepper to taste, and stir in the chopped green onions.
  • Serve hot and enjoy!

Notes

You can add in your favorite protein, such as chicken or shrimp, to make this a complete meal.
You can also add in other vegetables like broccoli or mushrooms.
For a spicier version, add in some sriracha or chili flakes.
