Cauliflower Fried Rice

- 1 Large skillet
- 1 food processor or grater
- 1 Large mixing bowl
Ingredients
- 1 head of cauliflower - cut into florets
- 1 tablespoon vegetable oil
- 1 small yellow onion - diced
- 2 cloves of garlic - minced
- 1 red bell pepper - diced
- 1 cup frozen peas and carrots
- 3 tablespoons soy sauce
- 2 teaspoons sesame oil
- 2 green onions - chopped
- 2 eggs - beaten
- Salt and pepper to taste
Instructions
- In a food processor or using a grater, pulse the cauliflower until it reaches a rice-like consistency.
- In a large skillet, heat the vegetable oil over medium heat. Add in the diced onion and cook until translucent.
- Add in the garlic, red bell pepper, and frozen peas and carrots. Cook for 2-3 minutes, until the vegetables are slightly softened.
- Add in the cauliflower rice and cook for 5-7 minutes, stirring occasionally.
- In a small bowl, mix together the soy sauce and sesame oil. Pour into the skillet and stir until the cauliflower is coated.
- Push the cauliflower rice to one side of the skillet, and add in the beaten eggs on the other side. Scramble the eggs until cooked, then mix them into the cauliflower rice.
