  • 1 Cocktail shaker
  • 1 Strainer
  • 1 Collins glass
  • 1 cocktail spoon
  • 1 Ice cube tray

Ingredients
  

  • 6-8 fresh blueberries
  • 6 mint leaves
  • 1 tsp granulated sugar
  • 1 oz white rum
  • 1 oz coconut water
  • 1 oz club soda
  • 1 lime - juiced
  • Ice cubes
  • Extra blueberries and mint leaves for garnish

Instructions
 

  • In a cocktail shaker, muddle together the blueberries, mint leaves, and sugar.
  • Add in the white rum, coconut water, and lime juice.
  • Add in a handful of ice cubes and shake vigorously for 30 seconds.
  • Strain the mixture into a Collins glass filled with ice.
  • Top with club soda and gently stir with a cocktail spoon.
  • Garnish with extra blueberries and mint leaves, if desired.

Notes

For a non-alcoholic version, omit the white rum and increase the amount of coconut water and club soda.
You can also use frozen blueberries instead of fresh, just be sure to let them thaw before muddling.
For an extra tropical twist, add in some pineapple juice to the mix.
To make a large batch for a party, simply multiply the ingredients by the number of servings desired and use a pitcher instead of a cocktail shaker.
